Blackberry & Pistachio Ice Cream Sundae

 

INGREDIENTS

250ml double cream

2 large meringues

Handful of blackberries

Handful of shelled unsalted pistachio nuts (roughly chopped)

Vanilla ice cream

Icing sugar

 

METHOD

Pour the double cream into a bowl and whisk until it thickens. Break the meringues and add to the cream along with the blackberries and pistachio nuts (leave some nuts to one side for serving). Gently fold together.

Add 2 scoops of vanilla ice cream to two sundae dishes and top with the blackberry cream. Dust with icing sugar and sprinkle with chopped pistachio nuts.
