Rhubarb Margarita



For the fruit syrup

2 large stalks rhubarb, chopped

450g fresh strawberries, sliced

350ml water

300g sugar

For Margaritas

50ml rhubarb syrup

35ml Orange flavoured liqueur

50ml Tequila

25ml Lime juice


For Rhubarb Soda (alcohol-free option)

100ml rhubarb syrup (you can use less if you prefer a less sweet soda)

Sparkling water




To make the rhubarb syrup, place the chopped rhubarb, strawberries, water and sugar in a large saucepan and bring to a boil. Reduce the heat and simmer for about 20 minutes, or until fruit has broken up. Strain the syrup through a colander to remove the large pieces of fruit. Using a fine mesh sieve or a muslin cloth, strain the liquid again.

Once the syrup has cooled, pour it into a glass or a jar and place in the refrigerator to chill for one hour.

To make margaritas, place a handful of ice, along with the tequila, orange liqueur, rhubarb syrup and lime juice into a cocktail shaker. Shake for one minute then strain into a cocktail glass.

To make rhubarb sodas, fill a glass with sparkling water and ice. Add 100ml of rhubarb syrup and enjoy!
